Fantastic Fries

French fries are a wonderful indulgence. Unfortunately, the world has conspired against me to create french fries that just plain suck. Regardless of the venue, it seems that fries have become worse and worse. It probably has something to do with the health nazis, but being able to munch on a really good french fry is almost as difficult as finding a store bought tomato with flavor. I remember a trip to Copenhagen a few years back. I was in some hotel that used to be the Soviet embassy and was just craving a good old cheeseburger and fries. The burger was okay, but the fries were first class. I was amazed that I had to go to Denmark to eat good American junk food.

Okay. The other day I had read a post on HomesickTexan about lard. And I rendered my own. Aside from having some cracklins, I decided to use some of the precious fat to make some real fries. I sliced my own taters, patted ’em dry, cooked ’em up in lard, and sprinkled them with some coarse salt. PERFECTION! Next up will be finding the freshest fruit I can and make a pie with that lard. And then, just maybe, I’ll actually try out that tortilla press that I bought a decade ago…
