When Tapas Becomes Entree

I’ve always been a big fan of tapas style dining. Small portions of food, shared among friends, provides enormous variety and great fun. I bought a few very nice filets from the butcher the other day. My game plan waws to prepare them along with a few other odds and ends and serve them tapas style. I had all the veggies and such done up, but the filets were the last to be prepared. I took the two filets and broiled them until they were just done (almost like the picture!). Moved them off to the side, poured the juices into a pan, added some Ruby Port and a dash of habanero powder.  I let the sauce reduce by half and then poured it onto two large plates and then placed the little filets in the middle of each plate. I then put a thin ”cap” of Verde Dolce Gorgonzola cheese on top of the filets and let the cheese warm. The plates never made it out of the kitchen.

Just to let you know how bad sports talk radio has become in Houston… The ongoing, just wouldn’t die, discussion on one station was how a man should calculate the optimum age for his significant other. The formula agreed upon was half the man’s age, plus seven years. Hmmm…
